Tofu Pumpkin Pie Recipe

 Recipe Ingredients: 

  • 1 1/2 (12.3 oz. each) packages of  Extra-Firm Tofu 
  • 2 cups Cooked Pumpkin
  • 2/3 cup Sweetener (your choice)
  • 1 1/2 teaspoons Ground Cinnamon
  • 1 teaspoon Vanilla
  • 3/4 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • 1/8 teaspoon Ground Cloves

Food Preparation Instructions:

  • Drain tofu and blend in a food processor or blender until smooth.
  • Add the remaining ingredients and blend well.
  • Pour into a 9" pie pan.
  • Bake in a preheated 350 degree F oven for approximately 1 hour.
  • Filling will be soft, but will firm up as it chills.
  • Chill and serve.
